Chocolate Chunk Cookies


Remember when I mentioned that we are now Costco members?

My latest purchase was a HUGE container of coconut oil. It’s organic and unrefined and I couldn’t pass up the price. Now I have to figure out how to use all of it!

I don’t plan on consuming it all, and if I start to, please stop me. I can use it for hair masks, eye makeup remover, moisturizer, and so on. I’ve also been learning that coconut oil is a great substitute for butter in baking.

As per Matthew’s request for cookies,  I made Coconut Oil Chocolate Chunk Cookies.

I doubled this recipe. the only tweaks I made were that I used 2 cups of all purpose flour and 1 cup of white whole wheat flour and  I ended up baking each batch for about 18 minutes. I also used chocolate chucks instead of the chips.

The end results were a feast for the senses. The smell of the sugars and the coconut oil was incredible. The edges are nice and crisp and the center remained soft. The cookies also have a nice heftiness to them due to the density of the coconut oil.

I will definitely be using coconut oil in my baking a lot more in the future!

    mmmm, delicious! whipping a cup of coconut oil with a few drops essential oil makes the best all-over body moisturizer! it’s also a great stainless steel polish. and oil pulling, of course. I ❤ coconut oil! those Costco containers are the best.
